A Merced family is all-in opening their food truck at the Tarmac.

Phantom’s Food Truck, which sells Tex-Mex style food, is one of the newest additions to the Tarmac at Castle. 

The family accumulated their money together to open their food truck, according to co-owner Alizareth Martinez.

Martinez says her father, who is one of the cooks at Phantom’s, worked at mostly restaurants his whole life. She says like most cooks at restaurants, he worked long hours. She says her sister, Denice Chavez, thought her father was not getting the compensation he deserved. So the 19-year-old college student presented the family with the idea of opening a food truck.

After some setbacks, Phantom’s Food Truck, made its debut at the Tarmac on October 18.

Martinez says Tex-Mex style food is cooked differently, the steak and chicken are cooked as a whole on the grill, not chopped-up before hand. She says the food quality also seems to taste better.

Martinez believes these are the best burritos and tacos people can try.

Hours of operation:

Wednesdays – Saturdays (10:30am-9:00pm), Sundays (12pm-6pm).
